Ingredients

  • Nylon sago – ½ cup
  • Water – 2½ to 3 cups
  • Buttermilk – ½ cup
  • Ginger – 1 tsp, grated
  • Green chilli – 1, finely chopped
  • Coriander leaves – 2 tbsp, chopped
  • Salt – as needed

Method

  1. Dry-roast the sago for 2–3 minutes over low heat without browning, cool, then pulse briefly so some pearls are broken.
  2. Bring the water to a boil, add the sago, ginger and green chilli and reduce to low heat.
  3. Cook, stirring frequently, until the sago is completely soft and the kanji is lightly thickened. Add a little hot water if it becomes too thick before the pearls soften.
  4. Switch off and allow the mixture to cool until warm rather than piping hot.
  5. Whisk the buttermilk smooth and stir it gradually into the warm kanji.
  6. Add salt and coriander. Do not boil after adding buttermilk.
  7. Serve warm or at room temperature; loosen with a little water or buttermilk if it thickens on standing.
