Cook this recipeBEFORE YOU COOK
Dry sago is firm and usually cannot be used straight from the pack. For khichdi, vada, thalipeeth and many breakfast dishes, rinse it two or three times, then soak it in the measured quantity of water given in the recipe.
Properly soaked sago should press easily between your fingers, with no hard white centre and no water collecting at the bottom of the bowl. Soaking time varies by size and manufacturer. Payasam and kheer may cook the sago directly in liquid, while sago meant for puffing or frying is used dry. Always follow the preparation stated in the individual recipe.
