Sago Laddu
Soft homemade laddus made with roasted ground sago, ghee, sugar, cardamom and cashews.
Ingredients
- Sago – 1 cup
- Powdered sugar – ½ cup or to taste
- Ghee – ¼ cup
- Cashews – 2 tbsp, chopped
- Raisins – 1 tbsp
- Cardamom powder – ¼ tsp
- Warm milk – 1–2 tbsp, only if required
Method
- Dry-roast the sago in a heavy pan over medium heat, stirring continuously, until lightly golden and crisp. Cool completely.
- Grind the cooled sago to a fine flour and sieve it.
- Heat a little ghee and roast the cashews and raisins. Add the remaining ghee and sago flour; stir over low heat for 2–3 minutes.
- Turn off the heat. When the mixture is warm, add powdered sugar, cardamom and the roasted nuts and raisins.
- Mix until it holds together, then shape small portions into laddus. Add only a little warm milk if the mixture remains too crumbly.
- Cool completely before storing airtight. If milk was used, refrigerate and consume promptly.
