Sabudana Burger Patty
A crisp-edged sabudana burger patty with potato, peanut and vegetables, designed to stay firm enough for a bun without becoming dry.
Ingredients
- Sago – 1 cup
- Water – about ¾ cup for soaking
- Boiled potatoes – 2 medium, cooled and mashed
- Roasted peanuts – ¼ cup, coarsely ground
- Carrot – ¼ cup, grated and squeezed dry
- Green peas – ¼ cup, lightly mashed
- Green chilli – 1
- Cumin – ½ tsp
- Rice flour – 2 tbsp
- Salt – as needed
- Oil – for pan-frying
Method
- Soak sago 4 to 6 hours until soft and drain for 15 minutes.
- Mix sago, cooled potato, peanut, squeezed carrot, peas, chilli, cumin, rice flour and salt.
- Press a spoonful in your hand. It should hold together without releasing water. Add 1 tablespoon rice flour if too soft.
- Shape into patties about 1.5 cm thick and chill for 15 minutes for easier handling.
- Heat a lightly oiled skillet over medium heat.
- Cook patties 3 to 4 minutes on the first side without moving them until a crust forms.
- Flip with a broad spatula and cook the second side 3 to 4 minutes until golden and heated through.
- Use immediately in a bun with lettuce, tomato and a sauce of choice. If making ahead, cool patties before refrigerating and re-crisp in a pan.
