Sabudana Nimish
An Awadh-inspired dessert that pairs a small amount of chilled cooked sabudana with saffron-cardamom milk foam; it is inspired by Nimish rather than a traditional Nimish formula.
Ingredients
- Moti sago – ¼ cup
- Water – 1 cup
- Full-fat milk – 3 cups
- Fresh cream – ½ cup
- Powdered sugar – 3 to 4 tbsp
- Saffron – a pinch
- Cardamom powder – ¼ tsp
- Pistachios – for garnish
Method
- Cook rinsed sago in 1 cup water until completely tender. Rinse briefly with cool water, drain very well and chill.
- Simmer the milk gently until reduced by about one-quarter, then cool completely. Chill for several hours.
- Mix the chilled reduced milk with cold cream, powdered sugar, saffron and cardamom.
- Whisk with an electric whisk until very light and foamy. Stop before the cream becomes butter-like; the goal is soft airy foam.
- Fold in only half the chilled sago so the foam remains dominant. Reserve the rest for layering if desired.
- Spoon into chilled glasses, layering a small amount of sago with the milk foam.
- Garnish with pistachio and serve immediately while airy.
- Traditional Nimish/Makhan Malai is a winter milk-foam sweet associated with Uttar Pradesh and does not contain sago; this is an explicitly Awadh-inspired adaptation.
