Ingredients

  • Nylon sago – 1 cup
  • Roasted peanuts – ½ cup
  • Fresh coconut – ½ cup, grated
  • Rice flour – 2 to 3 tbsp
  • Green chillies – 2
  • Ginger – 1 tsp
  • Cumin – 1 tsp
  • Coriander leaves – 2 tbsp
  • Salt – as needed
  • Water – as needed

Method

  1. Dry-roast the sago lightly and cool. Pulse it to a coarse meal rather than a fine powder.
  2. Coarsely grind the roasted peanuts. Grind chilli, ginger and cumin with a spoonful of water.
  3. Combine sago meal, peanut, coconut, chilli-ginger mixture, coriander and salt.
  4. Add rice flour and sprinkle water little by little until the mixture holds together when pressed; it should not be wet or sticky.
  5. Shape small oblong or round kozhukattai with lightly oiled hands.
  6. Arrange with space between them on a greased steaming plate.
  7. Steam over actively boiling water for about 10–12 minutes until firm and cooked through.
  8. Rest 2 minutes before lifting them from the plate and serve warm.
