Ingredients

  • Moti sago – ¼ cup
  • Falooda sev – ¼ cup
  • Basil seeds / sabja – 2 tsp
  • Chilled milk – 2 cups
  • Rose syrup – 2 to 3 tbsp
  • Mixed fruit – 1 cup, diced small
  • Vanilla ice cream – optional
  • Nuts – 2 tbsp, chopped

Method

  1. Cook the rinsed sago in plenty of water until fully soft and translucent-tender. Drain and rinse briefly under cool water to remove surface starch; chill.
  2. Cook falooda sev according to its package until tender, drain, rinse cool and chill.
  3. Soak basil seeds in ½ cup water for about 15 minutes until they swell fully; drain excess water.
  4. Mix chilled milk with rose syrup and taste for sweetness before adding any extra sugar.
  5. In tall glasses, layer sago, basil seeds, sev and chopped fruit.
  6. Pour in the rose milk slowly so the layers remain visible.
  7. Top with optional ice cream and nuts.
  8. Serve immediately with a long spoon. Keep all cooked components chilled separately until assembly; do not store assembled falooda for long because the sev and fruit soften.
